Well just mixed up some brine for Fair style Turkey legs. Started Eating these at the Rogers Flea market which is the largest I know of. A friend named Charley used to sell these here and run a restaurant in town. Look kind of cave man eating them but they are good. I use to buy three or four extra for taking for lunch. So will post pics as things come around if your interested.

How long you brineing and smoking? Would like to see pictures too.
Well bring for 48-72 hrs. Smoke 2 hrs at 225 degrees till IT reaches 160-165 degrees.
