Title: summer sausage question

I made up 20 lbs of summer sausage last night and plan on smoking this evening. It looks like hanging the sausages is the preferred method of smoking, however I was wondering if they could be laid on the racks in the Bradley? I have 10 casings stuffed and made them the length of the Bradley racks. Just wondering if this would be acceptable or I should just hang 5 at a time and smoke?

i always rack my sausages. they seem to cook more evenly this way for me but the most i do at one time is 10 lbs.

You can lay them on the racks, you just need to flip them half way threw the smoke and during cooking cycles. Dont let the chubs touch each other in the smoker.
