first time makin jerky in the OBS , have smoked almost everything else with no complaints.Have 4lbs of Goose meat sliced and marinating as I type used Hi-Mountain jerky cure & seasonong 1.5 lbs in mandarian teryaki and 2.5 lbs in original. Any body done goose before what kind of wood/ smoke time. Any good recipies, have done quite a bit of bacon so not hesitant to use cure's etc....
The hi Mountain has cure. I love gooses jerky! smoke two- 4 hours between 140-160 till done. I'm not good to ask as I prefer Oak and Hickory on every thing.
