Cant believe I actually found time to smoke on a Monday night, but I did. :) And I finally go to try out some new pellats.

I had some chicken thighs marinating in Italian Dressing and put them into the smoker at 200 until the reached an IT if 160.

Once they got to 160 I put them back in the Italian Dressing Marinade and ramped up the smoker temp to 275 for about an hour until they looked like this.

I pulled the chicken and tossed in some Big Moes and placed back in the smoker at 200 for another hour or so (not all times are exact ;) )

Big Moe's Apple Smoked Pulled Chicken Sammich, and nop that ther didnt suck at all.....
My kid asked for second's and thirds....

Its close to dinner time at out place but now I am going to be disappointed because we are not having anything smoked. I gotta stop looking at this site around meal times.
