Took a while to load the casings as I haven't received my Kirby Cannon yet but I got
them done. Ready for some AM smoke.

Thanks man! Yeah, jerky gun and 21mm collagen casings isnt the most user friendly combination but i had to do it this way while im saving some change for Pikemans stuffer.
As far as the knots go, i just twisted the ends instead of tying and it seems to be just fine :)

Mix of extra lean ground beef, pork butt, 21mm collagen casings and positively surprised by the hi-mountain pepperoni mix. Heated without smoke at 130 for an hour, smoked with hickory for 2 hours at 150 and brought up to 152 IT at a cabinet temp of 170. The only bad thing is that both my employees and wifeys co-workers liked it so much that i'm out.
Good news is that i got my Kirby mixer and counting the days before ordering his stuffer.

My wife says that a mile of sticks sounds like a lot of meat and very expensive! How do u reply to that? I came up with "this means more pepperoni for you and your coworkers"...... Her reaction was
