One of my favorite soups to make. Easy and tasty. I usually use double the veggies.
Albondigas
2 c cubed carrots
2 c cubed potatoes
2 c cubed zucchini
1/4 c chopped cilantro
1 lb ground beef (I use 90/10)
1 egg
1c instant rice
1/2 onion, diced
salt and pepper to taste
1 8oz can tomato sauce
8 c boiling water
Put tomato sauce in boiling water and season with S&P. Mix cilantro, beef, egg, rice, onion and S&P to taste, form into small meatballs. Put into boiling water/tomato sauce and cook 5 minutes. Add potatoes and carrots and simmer 15 minutes, add zucchini and simmer until done.

I LOVE that soup...we make it....when you get it at some resturants the broth can be like bath water honestly...for those of you that haven't had this soup it is similar (kinda) to Italian wedding soup but Mexican...very nice Si...

Use chicken stock, broth or chicken base instead of water...makes better flavor. I had some wing tips from cutting apart wings for smoking the other day, threw in while boiling, scooped out before putting other ingredients in. I'm guessing the Wedding soup has parsley instead of cilantro. :)

This is great soup. My wife makes something similar and uses alot of escarole. Love it.
