Well I fixed the racks so they would fit. If you look close you can see where I bent the racks to fit. Here are the 2 racks of meat in the Bradley

Well took it to work this morning and 100% loved the beef (gunpowder) sticks :) the pork sticks were not as big of a hit. :-\
My boss is sending me 4 lbs of venison to make deer sticks out of, question is how much fat o I need to add if any per pound of venison? Do I even need to add fat?
When I grind up my Venison, I usually add 2 lbs of beef chuck roast to 8 lbs of Venison.
The chuck roast has some good marbling and gives it some nice flavor.
On jerky sticks I do a 60/40 or 6 lbs Venison to 4 lbs of pork. Gives it a little more grease like a 80/20 beef. people seem to prefer a little grease in their sticks.
