Title: Christmas Cook part deux

Last thread was the cheese for Christmas, now the next batch of stuff.

First is 7 lbs of pistachios.
Loaded on the racks and ready to smoke

After an hour of hickory, all ready for Christmas company.

Next is some pastrami --corned beef brisket, washed, slathered with mustard and pastrami rub added. Not sure which rub it was as I had a container of rub marked 'pastrami rub left over from the last time or two.

Done ad ready to go into the fridge- will slice tomorrow.

Now it is sausage time:
First, Italian sausage. Mixed it up in the Kirby mixer but didn't stuff it. Going to use it as stuffing for some Polish golabki (stuffed cabbage). If I have any left I'll stuff it later.
Bagged and ready for the fridge until needed.

Next, kielbasa
Stuffed and ready to go into the Bradley for 2 hours of smoke.

Don;t have the time to cook it completely in the smoker so I had to sneak and open one of my Christmas presents

Just what I wanted (of course you usually get what you want when you buy it yourself. Don't worry I still wrap it and stick it under the tree.)
Everyone into the pool for a swim to 155* IT

Done with the swim and out and blooming.

Still to come,- hot dogs, jerky, ABTs, couple of breakfast fatties, golabki, pierogi, and then have to figure out something for Christmas day,

Really nice Gus...the kielbasa looks really good...and I am with Pat, I'll bring some beer...

Ambitious, lots of hard work, beautiful---- and there are a lot of folks and family that are going to enjoy that hard work.
