Title: The Christmas Bacon is done!

Well, our two kids, their spouses, and the 3 grand daughters will be here for the weekend, so I needed to get some bacon done to send home with them.  I try to send em each 10 Lbs of bacon, 10 Lbs smoked cheese, and 10 Lbs of sausage.  Need to get the sausage done yet.  This is a very simple bacon cure, it is a hybrid of a few great recipes I have found here.
For every pound of belly:
1 Tbspn MTQ
1 Tspn onion powder
1 Tspn dark brown sugar
1/2 Tspn Garlic powder
Dry rub the cure on the belly, then close it in a ziplock, then on day 3 pour in a good amount of apricot syrup.
Day 7 rinse, soak 1/2 hour, rinse again, allow to dry, and smoke it up!

Yeah this place rocks the food world for sure. Have you try Habs CBB. Damn good stuff.

This cure started as Habs!
I just cut down the Garlic, and added the apricot syrup.
Tried it because apricot syrup is so much cheaper than maple syrup, and found I like it even better.
