Title: Need some input on smoking pheasant

My daughter and father went to South Dakota with me and we shot a pile of pheasants. I have never smoked any pheasant but hear it is excellent. I was wondering if any of you have done it. Thanks.

We also got our limit of sharp tail grouse. Will probably smoke some of them too.

I just did some for a Friend of mine and it turned out really good, I used a very simple brine of
1  cup kosher salt
1 cup brown sugar
1 cup bourbon
1 gal water
brined it over night then I smoked it on my Weber smoenator for about 4 hrs coming to the internal temp of a chicken (wasn't sure what it should be so I went better safe then sorry) turned out very moist and good tasting

I would do it with a simple brine as for chicken too! Not sure about the Bourbon though LOL! Smoke and finish like chicken also if it was mine.

I do love pheasant and Grouse too!
