Title: Summer Sausage Casing Help
Post by: Thomas DeWitt on December 17, 2011, 02:44:47 PM
OK, so today I learned that you need to be careful what size sausage you make for a DBS 4 rack.  Can anyone tell me an ideal length for sausage in the DBS.  Also, do you know a good source for said casings of the correct length.  I want to make another batch of summer sausage soon and need to place an order.  I personally would like to find some clear ones if possible.

This is where I get my casings. I have purchased the 1.5 inch casings but they seem to stuff about a 2 inch sausage. I can stuff them tight and I use 3/8 hog rings to seal them.

Thanks, placed an order for 40 12 inch ones.  Hope they are short enough.   :P
