Title: time in fridge

If I was to make some sausage today for some ABT's that I will be making
next Saturday, Is it cool to just let sit in fridge all week or should I freeze it and than
thaw when needed??

I always cook a large number of ABT's at once and freeze them. When company comes over, I thaw and reheat in a toaster oven.
Does the sausage have cure in it?
If not, I would freeze it to be on the safe side.

No cure, just reg. fresh sausage.  I used all my Jals on fri. for a test batch
and smoker will be in use for other things today ;) so no prepping a head of time.

I thought I should freeze to be safe as well.

I wouldn't leave fresh in the fridge that long, I don't prefer to leave any meat in a fridge more than a couple days. Just freeze them. Some people may have a different opinion but I prefer to be safe than sorry.
