Well I completed my second batch of dogs using 812's recipe. These were much better, watch the temp in the water bath closer, used apple for 2 hours 20 minutes, granulated garlic this time instead of minced and I let the flavors sit longer in the fridge before I mixed with the meat. Meat this time was 2 1/2 buffalo and 2 1/2 pork, but I added and extra pound of pork fat, I like my dogs just a little more greasy  ::) . I also left the meat at a 3/16 grind for more texture. I need to put this on my to do list. Need to get some casings first for dogs. Those look good.
