I have had a 2.75 lb piece of pork loin curing in the frig for Canadian Bacon. (A tip of the hat to Habs for his great recipe and informative write up on the recipe website).  I had tied it to make it as round as possible prior to applying the cure but sitting in the frig for a number of days will still have tendency to make it flatter than round.  Today I decided to smoke it.  Having nothing better to do, I wrapped the loin in a Frogmat to make it as round as posssible and secured it with high temp cooking bands.  Thinking it would still flatten while sitting on the rack I decided to hang it horizontally.

Once it hit an IT of 142 I brought it in the house to rest.  It is still hanging in the Frogmat wrap with the rack between two chair backs.  Do I think this was all worth it?  Who knows but I had fun messing with it.  You can do that when you're retired! ;)

I like that extra low rail for your 'safety net'..

I need to get one of those rail kits.

There is the lowest rail that came in the Bradley below the one that the safety rack is sitting on.  Having 8 rails really gives you lots of "positioning" choices when you're not doing mass quantities.

That is about as round as I can get 'em.

Beautiful! Don't get much more round then that! Santa told me I'm getting a frog mat for each shelf. Should be 12. I will remember that trick. I love bacon and Canadian is my favorite. That's so pretty it would make a very nice gift!
