Title: Old Spanish Sausage Recipe

Got a recipe sent from Northern Spain and figured  I'd give it a try.

I did not use fresh ingredients for the first try, but opted for powdered spices.

Also made some Salami NepaS had sent.

All done. Let them rest last night.

They took 10 hours with 5 of smoke.

If I leave if hanging in the fridge could I get close to a "dry" salami texture? How long do you suggest?

Yup leave it in the bag in the fridge for a day or two,might wanna put it on a plate just in case it leaks some.

Nice job!  That looks so good.  If it weren't so late, I'd go get some sausage out of the freezer and heat it up for a snack.

Those looks so darn good. After the holidays and the end of hunting season I am going to crank our some of those. It looks like you made some modifications to the bucket top.
