I was wanting snack sticks and Taby wanted Slim Jims so here we go.

The ingredients.

All mixed up.

I use one of these thingies to make sure the dry stuff dont have any clumps.

6 lb course ground deer and 4 lb course ground pork butt.

Mixed and ground through the 6 MM plate.

All the good stuff added.

Now the fun begins.

All racked up and ready for a long day.

JD is standing guard.

After 8 hr with the Bradley set at 110 F

After 4 hr smoke with Pecan, smoker set at 140 F

Raised the smoker temp 10 deg. every hr and rotated bottom to top, front to back and the next to the bottom down

After 18 hr with the smoker restin at a max temp of 160 F

Let bloom over night then in the fridge for the day to dry a bit more.

After another 24 hr all packaged

All them packages are goin to the ones that helped Taby get were she is now.

Oh Ya there was some saved fro the cook.  ;D

Those look great what recipe did you use. Do they taste as good as they look. I like the very dry look .

I built the rack holder outta aluminum, its exactly the same dimensions as the inside of my smoker.

JD is doin really good, she lost ALLOT of weight but is startin to put some back on now and is moving around more but still has a ways to go yet.

I had the stuffing tube made, takes a bit to get the hang of it but it does work great.

Yep,,,,,,,,,,,I have an older PID so I have to wander out to the smoker and adjust the temp.

JD is lookin great compaired to a few weeks ago,,,,,,,,,,,,,still have to carry her up and down the stairs though.

On the 2nd line of the recipe I see 2 tsp of cure #1 added to 1/4 cup of distilled water.
