Today was belly bacon day. 3hours of hickory and an IT of 145ish yields this.

Hung up to cool down before they get wrapped in plastic wrap and into the frig overnight to let the smoke mellow out and distribute evenly.

The racks are stainless steel bacon hangers. Can't remember exactly who I ordered them from. Just Google "bacon hangers". That will give you plenty of sources.
