Title: Uh-oh! I got a problem.........
Post by: mhiykmeel63 on December 25, 2011, 06:56:47 AM
Started smoking my brisket yesterday around noon, smoked 4 hours and moved to the oven for better temp control. Got up to check this morning around 530 am and IT was 183, decided to let it go longer but when I woke up  at 7 the oven had shutoff and it was down to 150. Its been back in the oven at 250 since then and IT is around 165 now. Did a fork test and still feels stiff, dinner is at 1 any ideas? Am I screwed and are we munching on smoked SPAM for Christmas dinner?
