One thing we love to do with geese and duck is to make titties.  Only use the breasts (titties) breast the birds then cut breast meat into small pieces. About the size of your thumb or a little smaller. Take a package of bacon, cut it right down the middle.  Cut into thin sclices- vidallia onion, green or red pepper, jalepanoes.  Put on each piece of Bacon - meat, two pieces of onion, pepper, jalapeno.  Then a little fahita seasoning.  Role it up and toothpick it.  Smoke and cook to desired taste.  Amazing great on the grill too.  Big tailgate favorite.
