Title: Christmas Rib Roast Dinner

Bought a Choice Rib Roast at Costco the 15th, aged in refer @ 36* 10 more days then out to season and smoke /cook for dinner.

1tbs bl pepper
1tbs garlic salt
1tsp smoked paprika
1/2tsp onion powder
1tbs fresh rosemary finely chopped
1tbs fresh thyme finely chopped
1/3 C  OO

Rubbed down with the seasonings and coming to room temp.  Pre heat the Bradley.  Cook with Hickory, PID @ 210*

Out of the Bradley @ IT of 120* and FTC until time for dinner, about 1 1/2 hr.  Into a preheated oven and iron skillet, 500*, for 8 min.  My Wife has the table set and is opening a 2002 bottle of Cabernet Sauvignon.  Time to carve the roast.

Rare, juicy and tender, corn caserole and baked potatoe, a wonderful Christmas dinner.
