Gsmoke, Welcome to the forum,

Take it slow,  wash the smoker, racks, v tray, bowl, then season it  as per the manual, order a 48 pack of each type of bisquette find the ones you  do like and  stock up on them by ordering the 120 packs.

Also get a maverick ET 732 dual probe thermometer . use it on every smoke, Also remember to run your vent 1/2 to full open,

start off with something  simple  like a pork shoulder, season it  with paprika, pepper, granulated Garlic,  and ground mustard, Box temp 215 to 225 and a IT ( internal Temp) od 195- 200 for pulled pork sammies

Welcome to the forums Yankee.

Grab yourself some pork and just start going nuts.  Give yourself some time to learn your smoker and while you're sitting back watching the smoke float take a gander at the susanminor.org website and start planning the next smoke.
