Trying to get a lighter colored jerky and not the teriyaki/soy sauce black.
After getting some advice from NepaS, I ended up with some simple players:
Cure
Garlic
Onion
Salt
Pepper ( one of the batches )
Mix it up with 2 quarts of water and let sit overnight. Made about #9.

Into the smoker for 4 hours of hickory @ 130.

I got the color I wanted, but I'll have to throw it out. It is salty, way too salty!
