Title: Clear Marinade Jerky
Post by: SamuelG on December 30, 2011, 10:25:49 AM
Trying to get a lighter colored jerky and not the teriyaki/soy sauce black.

After getting some advice from NepaS, I ended up with some simple players:

Cure
Garlic
Onion
Salt
Pepper ( one of the batches )

Mix it up with 2 quarts of water and let sit overnight. Made about #9.

Into the smoker for 4 hours of hickory @ 130.

The good and bad.

I got the color I wanted, but I'll have to throw it out. It is salty, way too salty!

Any uses for way too salty jerky?

Gracias

Good job

You can cube up some jerky and make jerky bread.
