Made my 1st attempt at making sausage today. Used Bruce Aidell's recipe for Cajun-Style Anddouille. Not the best looking sausage, but it tastes great. I guess the wife will get her Jambalaya tomorrow.

Was a long day and a big learning experience.
Nothing wrong with the way that looks! I LOVE N.O., gumbo, jambalaya, andouille, and everything Cajun!

you obviously posted the wrong pictures, these ones look great! How long did you go on to smoke them for and did you use any of them fresh?

It was around 5 hours total time in the OBS. 1 hour dry time at 120, 2 hours of Pecan at 130, 1 hour at 160, 1 hour at 180. Pulled them out at 150 IT. We ate a little bit fresh out of the smoker. Gave the rest an ice bath, froze some and set some in fridge for Jambalaya this week.

That's GREAT looking sausage. I've been looking for an andouille recipe. I have Bruce's book. Would you change anything in the recipe if you made it again?
I would do it just like the recipe. I would make sure you use lean pork as called for. I didn't have that option because I didn't grind it myself. They tasted great, just a little on the greasy side.
