Title: Deer Meat

Anyone every try to smoke Deer Meat. Any Suggestion

I treat it the same as I do beef. You may want to smoke at a lower temp and not so long as any deer meat I use is very lean. I have tried larding it but did not work so good. Used bacon on top was excellent but took away some of the deer flavour. But be sure you remove all gristle and silver skin as it seems to be a deterrent to smoking. Piker

Like Piker said, make sure to get as much of the silver skin/gristle as you can out of the meat. That's where the "gamey" taste comes from. I've done roasts and loins all have turned out great just treat it as you would beef and you'll be fine.

get the IT to no more than 150....

i pull it out at 146 and it's WONDERFUL!!


i hope you guys done mean cook it till 165 when you say "treat it like beef"

if you hit 160-165 on venni you're gonna have some jerky on your hands
