Title: Heating element burned out. How long will sausage last?
Post by: rsherman24 on January 15, 2012, 05:35:47 AM
Had a big holiday weekend planned for the OBS.  Wrapped up some Buffalo Turds, mixed a 10 Lb. Batch of venison kielbasa, and a 10 Lb. Batch of snack sticks. Went to warm up the smoker for the Turds while I stuffed the kielbasa and the element burned out. I have power going to the element but no heat.

The Turds I  can do in the oven and the snack sticks are not seasoned yet so I can freeze that. I did mix the kielbasa with seasonings, cure, and a binder. My question is will this stay good sealed in the fridge until I can order a new element from Bradley or can I freeze this mixture already seasoned and cured? Not sure if Bradley customer service is open on Monday.

I'd go ahead and freeze the mixed and cured sausage.  I do it  when I just have time to mix the meat, spices, etc. but not enough time to stuff them.
