I picked up a couple racks of spares after work this morning and thanks to Sailor's Xmas exchange gift I got a new rub to try. CYM for glue and some Adams rib rubb then into the Bradley set at 280. The other rack got garlic EVOO and some Head Country.

After an hour of preheat and another two hours of apple smoke the temp only got up to 185..but it is below freezing outside so I wasn't surprised really..time for plan B :D
Fire up the MAK set on 280 to combat the freezing temps. This will keep the temps around 250. It's really getting cold out..55 degrees yesterday and in the 20's now..welcome to Illinois lol.

Yeah, no kidding.. Upper 40s and damp this morning, now the windchill is 11 and heading towards zero.
Way to go on the ribs, with all the wind and cold, the MAK is what we are using right now...
Almost done..another 45 minutes or so. Not quite tender enough yet.
