Title: Cold Smoke Without Adding Ice
Post by: JZ on January 19, 2012, 05:53:58 PM
I figured how to cold smoke cheese without adding ice to the pan or using a cold smoke adapter.

Just wait until it is -25*C. I figured that I been doing things wrong. I try to cold smoke when it is hot outside and hot smoke when it is cold outside. So today I got this bright idea -------- why not smoke cheese when it is cold outside and darned if it didn't work. The cabinet temps never got above 54* and there was no sweat on the cheese when I pulled it from the smoker.

I might be on to something here.
