Title: New in these Parts
Post by: slowpoke on January 22, 2012, 02:01:17 PM
I'm new in these parts.Bin smoking for years on(in) a brinkman. Now in MY bradley, with cold smoke adapter. Not too much I haven't smoked. To me cold smoked is 70F or less.Hot smoked is 220Fand up.
I never had any bad food, just stuff that needed some work,eg"maple, cherry, and apple wood for salmon lox,NOT straight oak.I have learned that there is NO quick fix for taste.Your taste buds ain't mine.If I give you a recipe, you'll have to work on it,to your likeing.Your problem is following my directions LOL.Jerky is good,Pulled pork is GREAT!And Ribs are Better.

slowpoke, I just had my cold smoke adapter delivered.  I ordered it from Costco.  I can't use it yet, because it's so cold in Ottawa I think that the salmon and cheese would freeze while smoking within minutes.  No problem keeping the Bradley 20 C or less when its -20 degrees outside!  Today though it's now almost 20 degrees warmer and raining... so much for Ottawa weather I guess...
