Title: Hatch Green Chili Enchiladas

Got me a box the other day of some of the best green chilies anywere!

Still mostly frozen.

As soon as I opened the package I had to make some chicken enchiladas so I got some chicken breast right outta the freezer and threw them in the smoker for 2 hr smoke.

Mean wile chopped up some chilies.

And made up the filling.

The chicken after 2 hr smoke and in the crock pot.

Then added the filling and about 6 hr later we got some pulled chicken ready to make the enchiladas.

All rolled up and ready for the sauce

Added some cheese and cooked till bubbly.

Dont look pretty but sure tastes gooood.

Glad the chilis arrived still frozen. Suprised actually since its been so warm here in Texas.  Look forward to seeing what else you do with them.

That looks really pretty to me!  I might have to do this for Super Bowl.  I'll have to roast my own chiles though, if I can find some in Montana this time of the year.

Man That stuff looks aweful---ly good. I can almost smell'em.
