Brined a chicken with simple brine: 1/2 c Kosher salt in 1/2 gal water with juice of 2 lemons and included the rind--24 hr later removed patted dry and seasoned with Clasic Mustard layer then Secret Weapon-- covered and into the refer for 24 hr.
Out of refer and ready for the smoke/cook in the Bradley, Hickory smoke, 210* and about 2 hr. later IT @ 141*, remove and into the SRG.

About 25 min later, IT @ 163* and out of SRG. Plated with oven roasted potatoes, blackeyed peas, salad on the side. Tender, moist and juicy, seasoning was wonderful.

What a great idea. I love to do spatchcock just on the grill, but smoked - with all the surface area you get spatchcocking . . . Sounds like just a little bit of heaven. Thanks for the post!
