Title: Smoked Hungarian Paprika Sausage

Tonight i'm preparing for my next Sausage adventure as I'm attempting some Smoked Hungarian Paprika Sausages. All in all another 10lbs will visit the OBS for a few hours tomorrow.

Nice color to them sausages.  Bet they get better looking after the smoke.  Remember the $$$$$ shot  ;D

That is correct. Pictures are coming from the stuffing alk the way through the cut.

Decided to cook some in larger hog casing and some in hot dog size collagen.

Those look great and the cut shots are looking fantastic. I do love the endorsement. I don't  know weather to believe the thumb or the tongue. I am going to assume the thumb. Were you happy with the finished project. They sure look good. You could not be any more hooked.

They are sweet and very juicy Kirby so I have to say these turned out very good.
What you see in the picture is a piece of sausage, not a tongue and I couldn't get them vacuumpacked fast enough to avoid her the "dad, can I please have one more piece?" :)

in fact, you've convinced me to the fact that my Bradley is too small so I'm building my own smokehouse. Didn't tell my wife about that plan yet though. Maybe a few planks at a time ;)

However, I had to expand my stuffing work space :)
