Title: First attempt snack sticks pics.

Tried them on a coil at first but the bottom was cooking too fast.

Pulled them out and cut into sticks and back in the smoker.

PID is reading at the bottom of the hanging sticks and the top number on the other thermometer was the reading at the top of the smoker. Looks like I might have a fan mod comming soon.

Big Bird,  It is pretty normal to have that 20 to 30 degree swing if you don't have the fan mod.  I did loads and loads of sticks without the fan mod and I am glad I put the fan in.  Next time you try some sticks you might want to try this.

I have the OBS 4 rack.  I cut some 1X and put it on my top rack slides so there is just enough room to hang your bell bar and thread a length of sticks over the bar.   When I stuff my sticks, I put a tape measure down on the cabinet and will stuff a long length and when I get about 40 inches I will take my kitchen scissors and snip the length at 37 inches and continue to stuff and then snip another at 37 inches.  I don't tie them (they won't leak out).  I put my bell bar toward the door 1/2 way between the deep V on the v-tray and the door.  This gets it off the back and the heat.  Slide a stuff length over the bell bar and you should not be touching the bottom as 37 inches should keep you just off the bottom.  If you cut a little long you can put more of the length hanging in the rear where there is more V-tray.  What you are trying to do is to move as much of the sticks toward the front of the cabinet.  Hang the cabinet probe thru the vent and place it just below the bell bar.  The bottom will cook a bit faster but no harm will be done to the sticks.  Do a slow temp bump.  I do 130 for 1 hr to dry.  2 hrs at 140, 2 hrs at 150, 2 hrs at 160, and finish at 170 to IT of 149 to 152.  By giving more hrs at a lower temp you will keep the bottoms from cooking too fast. 

I have done hundred's of pounds and never had a problem with the bottoms being over cooked or fat out.  After the IT is reached then bloom for 2 hours to cool.  No need to give an ice bath.  Then I put them in the beer fridge overnight to rest and lose a bit of moisture.  Then they are cut to 6 inch lengths and you get 6 lengths per the 37 inch stick.  (some bits for the cook off each stick)

The fan mod will reduce the 20 to 30 degree swing from top to bottom and will give you a faster cook.  Hope this helps.

Thanks for the advice Sailor. I really think the fan mod would be good for me because I want to make more sticks and do some bacon soon too. Today on my second round I did the sticks at 130 for an hour with no smoke, 150 for and hour with smoke, 160 for an hour with smoke then finished up at 170 no smoke and rotated racks every hour. I put the PID probe down the stack right in the middle of the racks (two above and two below). I couldn't get 10min of blooming before my wife ate one on me when I was not looking (cleaning the smoker at the time). Here's a pic of todays sticks.
