Title: Chopped Beef

I made chopped beef last night using the 3 pound 7-bone roast.  I started by marinading the beef in a brisket marinade that I brought back from Texas.  I smoked for two hours using the Jack Daniels Pellets for 2 hours @ 195 degrees.  When the IT reached 150 I boated with some of the marinade and beef broth until the IT reached 196 then off the ftc for about 2 hours.  I also dusted with garlic salt and Soileau's.  Then I usually pull the beef but this time I decided to chop it.  Once it was all chopped I put into a saucepan with some of the juices from the boat on low heat until all the meat was re-heated.

Here's my sammy.   ;D  Pretty simple, Steamed Potato Roll, mayo, topped with onions and Starnes.

This was very good!  I think I'm going to chop the beef from now on, only because its easier than pulling.

That there big ol hunk of beef looks great!

All chopped up looks even better.

I was gonna ask were you find corn on the cob this time of year, then remembered were you live.

It looks epic Snelly!!!  Looks like the perfect chopped beef RUINED with MAYO!!!!  WTF?  LOL

Tonight I made a pretty good burrito with the leftover beef.  It was awesome.

Beef, Black Beans, lettuce, salsa, taco sauce, sour cream, smoked peppercorn white cheddar, onions and of course Starnes.
