My last 3 lbs of gator heading towards jerky

This ought to be interesting.

I need to find somewhere local to get gator, you would think it would be easy, but it isn't.

Easier to get NY food.  ::)

West coast has muebe nuggets.

SE GA has nepasGnuggets  ;D

Sorted and rinsed the gator.

Cut into gator nuggets. Going with 2 marinades along with 1 cup water and 1/2 tsp cure 1.

The gator is not as dense as chicken breast so i'm only going to vac tumble for 5 mins then into the fridge overnight.

After 5 mins of tumble its going in fridge.

Just so happens I have 2 lbs. of gator meat thawing in the frig too.

Can't wait to see how this all turns out. :)

I think the clocks broken on your Dehydrator, I've checked back ten times and it still says 12:00  ;D

Just a tad dry but not bad, next time add 1.5 Tbs canola to the marinade.

Have not had gator in years.
It's hard to find in the upstate.
