Thanks to smoker pete for the idea for this great dish.
I had a chicken that was smoked and we only eat the white meat so I was lookin for a new way to use up the dark meat.
I took the carcass and removed all the meat then simmered the bones to make up some stock.

Took an 9.5 x 13.5 pan and sprayed with nonstick spray then layered in a box of cooked Stove Top

A layer of Colby Jack cheese

A layer of my green been casserole (green beans, onions, garlic, wor sauce and shrooms)

About 1 1/2 lb of smoked/cooked chicken

And topped of with about 6 cups of taters that I added the chicken stock and a stick of butter to

In the oven at 350 F till nicely browned, around 30 min.

Allowed to cool then slice and dig in.

Gonna have some jalapenos in it next time. ;)
