One of the Scot's I'm stationed with gave me his recipe for "Square Sausage". The taste is somewhat similar to our breakfast sausage.
2lbs ground beef
2lbs ground pork
3 cups fine bread crumbs
2 tsp black pepper
2 tsp nutmeg
3 tsp coriander
3 tsp salt
1 cup water
Mix all together. Line a couple of loaf pans with cling film and press mixture firmly into each. Place in freezer until sausage sets up. Remove and slice to desired thickness. Wrap individually and place in freezer.
