I added CA that I bought from a spice store and added 3 1/2 teaspoons to 5 pounds of vension sticks. I haven't cook them yet. After reading some post about it, did I ruin the sticks by adding this?? I read on the Lems site that it would preserve the sticks if kept on the counter. I also added trehalose to the mix. I haven't smoked them yet and am wondering if I should or just get rid of them and start over. Any help.

Did you add citrus acid? or Citric in powder form or the LEM ECA?
If you added powdered CA and the meat is turning white then yes its messed up.
ECA is added at 1 tsp per pound of meat
Trehalose is to lessen the game taste and keep freezer flavor away.
I added the powder form i beleive. I bought it at a spice store. I only put in about 3 teaspoons to 5 pounds of meat.. the meat isnt white I handed mixed it in then put it in casing over night.

Hand mixed is good.
Powdered CA starts to work immediately, where as, ECA is coated (like small caplets) and breaks down at 130* and starts to work.
3 tsp of regular powder CA MIGHT be to much.

Well got them to a internal temp of 125 and opened the smoker and saw that they were durning white even though the edible colligen casing. Threw them out and will start over this time with no acid added. I will have to order some from Lems. Oh well learned something today so it wasn't a complete wash.
