Oh this one was a simple one. I was just dying to see how the new smoker did in snow, cold and windy weather :)
Rubbed it with Zack's and wrapped it for the fridge last night. Got the smoker up to 220 in 5min and hit it with hickory for 2 of the 3 hours I kept it in the chamber. Then I pulled it and boated it in about a cup's worth of apple juice and into the stove it went for another 2 hours at 220.
Finally, peeled the blanket back and gave it a real shower of bbq sauce before I said "I'll get you soon" as I placed it under the broiler on low for 45min. This helped the sauce harden a bit and create a slight crust on the outside of the super tender meat.

The end. Tomorrow I HAVE to to get some sausages going.
Oh and for those who wondered, the temp on my propane smoker held to within 1F of the targeted 220 throughout the 3 hour chamber time.

I agree mighty fine ribs, chamber looks great.
