Title: pulled pork
Post by: smokingthemidwest on March 01, 2012, 06:23:46 PM
Hello everybody i have a quick question. Was thinking about injecting the pork butt with creole butter. Planing to smoke it starting tomorrow night. Should i inject it tonight when i apply the rub or wait till right before i start smoking it? I don't want to turn the meat into mush like i heard about in some posts. Is injecting it worth it? Thanks in advance. stm

have done some injecting though  not  with  butter, have with bbq sauce and injected and let stand over  night 8 to 10 hours and  started  smoking  with a  rub on the  outside. So at this point in time i would go for it and  smoke / cook at  225  till an it of 195 - 200 then pull, also helps to keep the  pork juicy

When I inject I usually use Carolina Treet or Cajun/Creole butter and do it the night before to let it "settle."

Not to get off the pulled poke subject but I love injecting CT into yard bird thighs. Mmmmmmmm!!!! Did it once in a poke butt.
