Hello ladies and gents, just took the plunge after drooling over this machine for over a year. My rational is two-fold, I get to make some great food, and I have a better excuse to spend more time outside than just smoking cigars!
I am excited to draw on many of your experiences and knowledge, good times and bad.

Thanks again everyone. Great to see local folks too! Looks like tomorrow evening will be seasoning time and Friday we'll try a beer can chicken. Smoker is here and the bubba pucks, mavirck 73, cover, and bisquettes are all tracking for tomorrow...can't wait!

welcome, it is addicting! I baught my smoker mainly for more capacity for fall salmon smoking, this site and all the helpful advice and experience now has me getting into curing up bacon, making sausage, smoking nuts and foods I normaly would not have done.

Just getting done with seasoning right now, gonna leave it on for another hour with maple burning to add some flavor to some rubbed chops to finish on the grill. It's a beautiful day!

Making a beautiful day of having lunch for the upcoming week

Beautiful spring day, got a killer rare cigar, some reserve port, and just pulled some spicy chorizo off after two hours of maple at an IT of 175*

Next is beer can chicken. Picked up a local free range organic bird, brined in water, salt, brown sugar, apple cider vinegar for three hours. Rubbed with evoo, Stubbs, and garlic powder. Going to smoke with apple for two hours with flying dog winter ale for two hours and finish on the weber genesis 330.

Can't beat a good IPA! I have a couple 175ml bottles of the 120 and 75 that I'm saving for full load smokes. DFH HQ isn't far from here, let me know if you need any DFH brews sent your way.

I smoke meat along with wild HTF cigars of course. It's all about being productive while being OUTSIDE. Love it, the burbs are ok with the right amenities.

So... I destroyed the "food" probe on my maverick 73 putting the chicken on the weber to finish. Reads HHH now. But the chicken was to die for, and I have a maverick 732 as a backup. Apparently I need a grilling probe to handle the 600* grill.

Don't give up on that probe just yet...   Let it cool down, then put it in a 200° oven for a while to dry it out.  Some liquid/drippings/grease might have made their way between the mesh and the metal probe.   That is it's weak link.

If you have it in your area, pick up Saranac's White IPA. It is a limited production spiced IPA, slightly on the sweet side but the spices and other flavorings quickly balance out the overall flavor.
