Well a year back or so I decided to get the OBS for my Hubs hobby when he retired. As those who know he never used it (nor retired lol) so it became my passion. And have used it many times a week. The other day he said "he" wanted to make sausage! Whoa baby..sure shocked me. When I asked him what he wanted to make he said let me look in the book. He picked out NEPA's pepperoni. Took pork and beef out of freezer and he had hella good time grinding it. Measured ingredients out for double batch. He griped a bit about how cold it was to mix up.(put a Kirby mixer on order ;D) The hog casings were a chore for him to rinse...but he did it and got them soaking. The stuffing wasn't pretty...but we(I) survived it. Saved a bit to make sticks the next day with the NEPA gun(jerky gun from a contest NEPA held last year) I took some pictures when I remembered to.

Very nice and I like the idea of the sticks without casings too. Gonna give that a try for sure.
