Happy to be smoking with my new Bradley digital smoker...doing Italian sausage for the first time. Pre-made Hot & Mild set at 200F for 2.5Hr. and hopefully with a inside sausage temp of 152F as one member points out.

Welcome aboard You should try ramping your sausage temp up in stages as to not fat them out. Good luck and post pics if you can :)

The best advice I could give you right now is if you get a chance to hang out with with your neighbor RossP, it will be worth your while. He makes an excelent Lox, is a BBQ Comp Judge, knows a bunch about smoking, and he and his wife are just great people.
