The wife brought home some prosciutto the other night and after searching a few recipes I decided to use my carbonara recipe and substitute the bacon with the prosciutto. I'm not sure the wife approved but I liked it. Here's a list of the ingrediants
Prosciutto
4 eggs
parmesan cheese
parsley
salt and pepper
garlic
olive oil to saute prosciutto
fresh pasta

It sure looks good Matt. Although I would tend to agree with Momma, kinda pricy cut of meat for that recipe.

I found a couple of recipes that use a red or white sauce but I thought the flavor of the prosciutto would come out better in carbonara. I'm always looking for a good recipe, got any for prosciutto?
Have to agree with Tenpoint5. I love prosciutto, but I enjoy the flavor and texture by itself. Especially due to the price of it. My personal favorite is just to eat it with some fresh melon slices when in season.
