Got a question, again. When first starting the sausage into the smoker and letting it dry for the first hour or so, am I supposed to put the water pan in at the start of this or keep it out until the sausage is dry and I am starting the smoke process? Thanks to all.
In my opinion, I put it in right off the bat so i dont forget. It wont make a big difference either way.
