Title: Houseboat trip. Looking for menu suggestions . . .

I'm going on a 4-day bass fishing houseboat trip with about 15 guys.  I want to wow them with smoked goods so am planning to bring the following prepared in advance:

Pork butt (for pulled pork sandwiches)
Jerky
Blazin' Pistachios
Smoked Almonds
Smoked Salmon (if I can find it on sale again :))
Snack Sticks

Any other suggestions?  I've got a few weeks so plenty of time.  Plan to make and freeze (since it is a 4+ hour car ride, and since the fridge is already pretty full).  It is easy to defrost at the lake since I'll vacuum pack, just put it in a mesh bag and drop it in the water for an hour or so!

That looks awesome; maybe instead of just hot sauce do a full-blown buffalo wing sauce!  That reminds me, I need to add salmon spread (smoked salmon/cream cheese food processored to just a little chunky).  Oh yeah, forgot to mention, going to make a baklava as well for the sweet tooth  :D.

We've made it both ways. It disappears fast either way.

I asked the Mrs. if it freezes well and she Laughed Out Loud. There is never any left.
