OK I got to ask this question 'cause I ain't sure.   

If you rub mustard on a butt or shoulder and the wrap it up let it sit for 48 hrs then rub with Bad Byron's or some other rub would it cause a problem?  Will the outer layer sour? 

I was asked to smoke 8 butts for church and I'am trying to figure a way to do them without backing myself into a corner on time. If I can rub them and hold them then this will reall help me on time since I don't have a larg cooker

Sounds like a perfec excuse to get a larger cooker/smoker  ;D :o ::). I will yield to others cause Ive only left CYM on a butt only overnight with rub on it.

TMB, I have started applying the glue and rub and straight into the smoker. No more overnight stay for me.  I'm not convinced that the overnight stay does anything for the flavor.  Heck, I've seen STC apply the glue, rub and straight into the smoker with the butts still frozen!

As for the 48 hour CYM thing, not sure what I think about that.  Don't think it would make the meat taste sour but I wonder what effect the acid in the mustard might have on the texture of the meat.  I'll yield to more learned members.

I have done the majority of my butts that way Tommy. Mustard Rub half hour to an hour then into the smoker
