Title: Brining

I am going to be smoking a 14lb turkey tomorrow and presently brining it  in a turkey bag set in a cooler in the garage. I have 2 gallons of the brine in the bag but it doesn't completely cover the bird and was wondering if just turning the bag over once in a while was enough.

Keep ice over the bird for the full time, thats the most important thing.  Turn the bag and turkey over in the cooler a few times while the turkey is in the bag, squeeze all the air out, and you will be fine.

Thanks Old Hickory, Wells its cold here now in the low 40s but I will put ice on it.
