I smoked two big butts on Saturday. In at about 7:30 am and out at about 10:30 PM. I used my new TS and it worked like a charm. There were swings from 208 - 216 with the set point at 215. I was able to leave for several hours without worrying about the smoker. I am very happy with it. We had pulled pork at 11:00 last night and my Wife had it for breakfast. So I had two more butts I prepped for bacon and have them in the frig. right now.
So I had taken out a buffalo "prime rib" that was 7 pounds. I just seasoned it with salt and pepper and put it on the rotissorie, pulled it at internal temp of 120 and we feasted on it tonight. I hurt myself. I had to have a baked potato with sour cream and garlic bread and wash it down with a cold one.
