We just got back from vacation down in the Carribean.. Went out for pizza one afternoon, and I had them put 'some' Scotch Bonnets on mine so I could try them out. (they are on every menu in sauces, etc.) NEVER EVER EVER AGAIN. :o :o :o

I remember a few years ago when a co-worker of my wife brought some back from Saint Thomas, if I remember correctly, and dared me to try them.
They did warn me that these peppers were about 50x hotter than jalapeno peppers. SURE!

Well Scotch Bonnets are a new one to me and I think I will pass. The wife and I love Tai food and they have some hot ground peppers, but I go very lightly with it. I have enough difficulty talking with a tongue.
In case you couldn't understand my poor attempt at whatever it was I attempted to say (above), Scotch Bonnets are a very slightly different variety of the same species as Habaneros. They're essentially interchangeable and equally vicious. I use both often, but very judiciously.
I'was in New Orleans when Squirt sent me a text telling me he had ordered a pizza with the dreaded Scotch Bonnet on it. I turned to Jan and said "You are not going to believe this"!
I knew they were hot, but not WEAPONS GRADE hot.. Lesson learned!
We did however run across a 'hot slaw' that MrsSTC had on a fish sammich. It had a definite zing, but wasn't overpowering at all. They used SBs to spike the vinegar that was then tossed with the chopped bell pepper/carrot/onion 'relish'. Might try that in some small controlled tests. ;)

I use to make a wing sauce from those. It was for some freinds of mine who loved everything hotter then Hades. I looked like i was working with biohazardous materials when I made the sauce. Long gloves, googles, respirator the whole nine yards. I could only do it outside as the smell would empty the house and keep it vacant for the day. LOL I tried the sauce a couple of times but way to hot for me
I love them myself! But in moderation!
With the exception of extracts, the only peppers hotter than Scotch Bonnet and Habanero are the Naga viper (Scoville 1.38 million) and the Naga Jolokai (Scoville 1.04) aka ghost pepper. If you are a chili head like me, this link might help.

I am typing this in monotone cause my head is pounding from my cold, so please laugh at him quietly. My wife woke me last night and told me to stop laughing in my sleep, it was keeping her awake. I was thinking that might work to get the teenager out of the house and looking for a J-O-B, but he loves hot stuff.

Uh yeah... SB~Habanero.
If or when i get my green house im going to try raising SHOW peppers. But in Ohio we dont get enough heat or long enough to grow them.
