I fired up the Bradley for 6 pounds of polish style sausage to go along with the pork shoulder I had in my charcoal smoker. I was hoping the Pittsburgh Penguins would get fired up as well and wake up and play some hockey. Oh well, at least we ate good :D

The beauty of a great Polish style sausage is its simplicity. Salt, pepper, and a little garlic and marjoram, that's it. This installment was 80% bison, 20% pork. Good stuff.

Oh !!! heck yeah, I would wait in line for some of that...
Looks real nice!

Thank you. The stuffer is from Grizzly. I've put a ton of meat through it with no issues whatsoever. Best $79.95 I ever spent for sausage making.
